I have been charged with 'catering' a bridal shower. Tea sandwiches, delicate salads, the whole nine. I'm cool with 'lady like" foods, I'm even fine with the menu being mostly vegetarian. But there was no way I was not plying the bride to be with her favorite ice cream. Her favorite happens to be Heath Bar Crunch, a flavor I am 100% behind. I love. Love. LOVE Heath bars. I do. Shamelessly.
I wanted to add a little something special to the ice cream for the special day and since the guest of honor is a coffee freakin' connoisseur, I added coffee. It's rich. It's creamy. It's caffeiney. It's Heathy.
Just a note. If you're wanting to make this, do be aware that no heat is added to the egg. If that is not something you're comfortable with you might want to skip this recipe. So here it is:
Toffee Coffee Crunch
Ingredients:

4 frozen Heath Bars

2 large Eggs

3/4 cup sugar

2 cups heavy cream
-
1 cup whole milk
-
1 tbs vanilla
-
2 tbs instant espresso
Directions:
Whisk eggs in a large mixing bowl until light and fluffy, 1-2 minutes.
Whisk in the sugar, a little at a time until completely blended. Add the cream and milk, whisk to blend. Whisk together coffee and vanilla. Add to mixture and whisk to blend. Transfer the mixture to ice cream maker and freeze following manufacturer’s instructions.
Smack the frozen candy on the counter to smash it into pieces (while still in it's wrapper). After the ice cream stiffens add the candy, let the mixer churn it through for about a minute. Ripen in freezer until hard.
